Brinjal-Soya Chunks Curry | Vankaya Soya Kura

This is one of those simple curries which fits for a regular menu.I have added soya chunks to the regular brinjal curry and it was a simple yet delicious curry which goes well with either rice or roti.Soya chunks are bland and has a nice meaty texture which helps in absorbing flavors very nicely.If you are not a fan of soya chunks try to add them in various curries,gravies and pulavs so that you would not mind having a bite here and there and is a nice way to include protein in vegetarians diet.
Brinjal-Soya Chunks Curry:
(Serves 2)

Ingredients:
5-6 medium Brinjals,diced
1/2 cup small Soya chunks
1 big Onion,chopped
2 Tomatoes,finely chopped
1 tsp Ginger-Garlic paste
1 tsp Red chili powder
1/2 tsp Garam masala powder
1 tsp Coriander powder
1/4 tsp Turmeric powder
1 tbsp chopped Coriander
1 tsp Fennel seeds
Salt to taste
2 tbsp Oil
Method:
  • Pressure cook for 1 whistle or boil soya chunks until they are soft.Squeeze the water and wash the soya chunks twice so that it will remove the smell.
  • Heat oil in a pan/kadai and crackle fennel seeds.
  • Add chopped onions and fry it slightly.
  • Add ginger-garlic paste and fry until the raw smell goes away.
  • Add finely chopped tomatoes and diced brinjals and cover it with a deep plate and pour some water over it and let it cook on low-medium flame until brinjal is cooked.
  • Add the cooked and squeezed soya chunks to it.Add red chili powder,garam masala powder,turmeric powder and coriander powder and salt to it.
  • Cook for 5 mins until the masala coats the vegetable and soya chunks well.Garnish with coriander.
Serve it hot with rice/roti.
