Eggless wholewheat chocolate cake recipe with step by step photos.Chocolate cake is a favorite to most of us and I would never no to a piece of chocolate cake as it is always tempting.But we restrict ourselves to eat less as it is usually made out of flour(maida) and butter,though sometimes I go overboard and eat more and feel guilty later.Also when I prepare any bake for my son I like to do it with wheat flour rather than the regular white flour.This recipe of wholewheat chocolate cake comes to rescue under such circumstances.I have tried this cake a couple of times and it came out well.The only change I usually do in this recipe is to use cold milk instead of cold water as the cake tastes bit rich with the usage of milk rather than the water in the recipe.The cake is also very moist because of the usage of COLD water in the recipe.I have mentioned few variations in the notes in case if you want to try the recipe.

Eggless Wholewheat Chocolate Cake:

Yields: 1 loaf or 7" round tin | Source: Vegrecipesofindia
Prep time: 10 mins | Cooking time: 35 mins | Total time: 45 mins

Ingredients:
dry ingredients:
1 cup(120 gms) Whole wheat flour(1 cup=250ml)
3 tbsp Cocoa powder
1/2 tsp Baking Soda
a pinch of Salt

for wet ingredients:
3/4 cup(150 gms) Sugar
1 cup(250 ml) Cold Water
1/4 cup Oil
1 tbsp Lemon juice/Vinegar
1/2 tsp Vanilla essence

Method:

  • Grease a loaf tin or 7" round tin with oil and line with parchment paper.
  • Preheat the oven at 180 deg C/350 deg F for 10 mins.
  • Sieve wholewheat flour with cocoa powder,baking soda and salt a couple of times and keep it ready.
  • In a bowl take sugar and add cold water and mix it until the sugar melts.Add oil and lemon juice and mix it nicely until you get uniform mixture.
  • Add vanilla essence and mix it again.
  • Now add the sieved flour-cocoa mixture to the wet ingredients and mix it nicely until you get a homogeneous mixture with out any lumps.The batter will be slightly on the thinner side.
  • Pour it in the prepared pan and tap it to remove the air bubbles and bake it in the preheated oven at 180deg C for 35-40 mins until the cake is done.To check the doneness of the cake you need to inset a toothpick in the center ,if it comes clean which indicates that it is done.
  • Remove the tin and let it cool for 8-10mins on the counter and gently loosen the edges with a knife and gently invert on the wire rack and let it cool completely.
Cut into slices and serve as a snack or decorate with chocolate ganache or cocoa frosting and serve as a dessert.

Notes:
  1. To make ganache: heat 1 cup cream over medium flame until it is hot(you do not need it bubbling, just hot enough to melt the chocolate) and pour over 2 cups chocolate chips and whisk it nicely until you get an uniform smooth ganache mixture and let it become slightly warm.Pour this ganache over the cake and decorate it with sprinkles or cocoa powder for a simple celebration cake.
  2. Use good quality cocoa powder and good quality chocolate for a richer taste.
  3. You can even frost the cake with cocoa frosting or chocolate icing.
  4. I have used 1 cup cold milk instead of 1 cup cold water and still it worked well and liked the taste of cake made with milk than the water.You can even use half and half of cold milk and cold water.Make sure you use cold water/milk not the room temperature water/milk.
  5. You can make the cake with regular flour or half and half too.
  6. You can replace oil with the melted butter(at room temperature)in the recipe but it needs to be beaten nicely as it is difficult to incorporate butter to the cold water.

Eggless mango semolina cake recipe with step by step photos.Mangoes are in season and why not use it in various recipes and enjoy the mango flavors at its best.I had posted earlier a Mango Pound Cake recipe which has eggs in it.Today I am posting an easy version of eggless mango cake using semolina. I had prepared this eggless mango cake recipes followed by the recipe here many times before but never got to post it here in my blog. This mango cake is made with semolina and I must say that it tastes almost like mango sooji halwa but in a lighter cake form and tastes absolutely delicious.Also it is a simple recipe with easily available ingredients in the kitchen.So what are you waiting for? do give it a try before this mango season and treat your friends and family with this delicious cake.

Eggless Mango Semolina Cake Recipe:

Ingredients:
1 cup Fine Semolina(Chiroti rawa)
1 cup Mango puree( puree from 2 large ripen alphonso mangoes)
1/2 cup Sugar
1/3 cup Butter,melted or 1/3 cup Oil
1 tsp Baking powder
4 Cardamoms,seeds
1/4 cup mixed sliced Nuts(pistachios,almonds,walnuts)

Method:
  • Powder the sugar and cardamom seeds to a fine powder.
  • Cut mangoes into pieces and grind it to a fine puree.
  • Add baking powder to the semolina and mix it well.
  • Add melted butter(or oil), mango puree to the semolina and mix it nicely and leave it aside for 15 mins until the semolina mixture becomes thick by absorbing the mango puree.
  • Preheat the oven at 180 deg C / 350 deg F for 12-15 mins.
  • Now add chopped nuts(reserve few to add on top) to the mango semolina mixture and mix it nicely and pour it into the greased loaf tin and bake at 170 deg C for 25-30 mins, keep an eye after 25 mins,it might get browned faster.
  • Do a toothpick test, if you prick in the center of the cake and remove, if it comes out clean means it is done.
  • Remove the pan from the oven and rest it for 10 mins in the pan and then turn it on the wire rack and let it cool completely.
Slice and serve it as a snack or dessert.

Notes:

  1. Always use good quality mangoes , the final color of the cake depends on the color of the mangoes.
  2. You can use even tinned mango pulp instead of the fresh mango pulp.
  3. The mangoes I used were very sweet and 1/2 cup of sugar was enough for it, if your mangoes are not sweet you can increase it to 3/4 cup.
  4. The original recipe asked for 1/2 cup butter, but I have used 1/3 cup melted butter and it worked fine too.
  5. You can use regular semolina too by grinding it in the mixie briefly.Do not roast the rawa.
  6. If the semolina mixture does not become thick even after 15 mins leave it for another 5 mins.

Moong dal Chilla Recipe | Moong dal Cheela

Moong dal Chilla recipe with step by step photos. Moong dal Cheela is similar to Andhra Pesarattu, yellow moong dal is used in cheela where as whole moong is used in Pesarattu but there is a lot of change in taste and texture of both the dosa varieties. Pesarattu is either stuffed with upma or onion-chili-ginger mixture and is served with Ginger Chutney where as Cheela can be prepared with or without cottage cheese mixture and is served with Chaat chutneys or Tomato sauce. Pesarattu is bit heavy where as cheela is bit light on tummy but I absolutely love both the variations.

Cheelas are prepared in the North India like how dosa is prepared in south India. Besan Cheela,Sooji Cheela and Moong dal Cheela are the most prepared ones. Cheela is also known as Puda or Pudla in some parts of  India.

Moong dal Cheela is protein rich and nutritious too,hence can be served for a filling breakfast or snacks, it can be even packed as rolls for lunch box and it stays good too.I have added green chilies and ginger while grinding the batter but you can avoid it if you want to prepare it for young kids.Also the batter can be prepared ahead and prepare cheelas or you can grind the batter and start preparing cheelas as it does not require any fermentation.

Moong dal Cheela Recipe:

Ingredients:
1 1/4 cups Green Gram(yellow Moong dal),de-husked,split
2 tbsp Bengal gram(Chana dal)
2 Green chilies,chopped
3/4: Ginger,chopped
a pinch of Asafoetida
Salt, to taste
Oil,to roast cheelas

for the filling:
1/2 cup fresh Cottage Cheese(Paneer),finely chopped
2 tbsp Coriander leaves
a pinch of  Salt

Method:

  • Soak moong dal and chana dal together for 2-3 hours and wash them and drain the water and grind the lentils with chopped green chilies and ginger to a fine paste,add required amount of water while grinding the batter. Add salt and asafoetida and mix well.The consistency of the batter should be similar to the regular dosa batter.
  • Mix the finely chopped paneer pieces with coriander leaves and salt nicely and keep it ready.
  • Heat the dosa tawa nicely and pour a ladle of batter and spread it in a circular motion to form a dosa, you can spread the cheela according to your desired thickness.
  • Pour a tsp of oil around the edges and on the cheela and cover it and cook on medium flame for a minute until the dosa starts turning brown.
  • Place a tbsp of cottage cheese mixture on one side of the cheela and fold it into half.
Serve it hot with Green chutney and Meetha chutney or Tomato sauce.

Notes:
  1. You can avoid chana dal in the recipe and prepare only with moong dal.
  2. If you want crispy moong dal cheelas you can add a tbsp of rice flour or sooji to the prepared batter and mix it nicely before making the cheelas.
  3. You can even place the paneer mixture in one corner of the cheela and roll it to form a roll and can be cut into two and can be packed for lunch box or for chaat parties.

Spinach Corn Sandwich | Grilled Corn and Spinach Sandwich Recipe

Grilled Corn and spinach sandwich recipe with step by step photos.I always look for various sandwich recipes as they are filling and can be made as a snack or for breakfast too,it can be easily packed for the lunch box as well.Though I have been preparing this sandwich for ages, I never got to post it in my blog.Better late than never , I am finally able to post this simple and delicious Sandwich recipe in my blog.

I love the grilled sandwich varieties where as TH likes the fresh sandwich varieties and few recipes suit for both the kinds. I make the fresh sandwich version for him and I prepare the grilled version for myself.Mumbai style Vegetable Sandwich is one example where one can eat it fresh or grilled and also this Spinach-Corn Sandwich can be done the same.Though taste wise both the fresh/grilled sandwiches taste nice I prefer the grilled version as I am inclined more towards the buttery cheesy hot grilled sandwich.

Spinach Corn sandwich is available in most of the coffee shops and pairs nicely with a cup of coffee or juice.You can serve this in a bite sized portions in your tea parties or it can be prepared like a open sandwich toast which makes a great appetizer for parties.The stuffing of the sandwich itself is so creamy that one can avoid the addition of cheese in the recipe but I do add cheese when I prepare it for my kiddo or for my guests.Also,I use mostly home made wheat bread for my sandwiches and I also prefer to add wheat flour instead of all purpose flour in the recipe for white sauce and I hardly find any difference when it comes to taste.Over all it is a healthy sandwich recipe(minus cheese) for adults and a wholesome Sandwich recipe for kids and even my three year old eats this sandwich without any complaints.

Spinach Corn Sandwich | Grilled Corn and Spinach Sandwich Recipe:

Ingredients:
8 slices Sandwich Bread(Wholewheat/Multigrain/Maida bread)
1/2 cup Cheese,grated
3/4 cup boiled Corn kernels
1.5 cups chopped Spinach
1 small Onion, finely chopped
2 Garlic cloves, finely chopped
1 tbsp All purpose flour(or wheat flour)
3/4 cup Milk
1 tsp Oregano(or Mixed Herbs)
1 tsp Red chili flakes
3/4 tsp Black/White Pepper powder
Salt, to taste
1 tbsp Olive oil or regular Oil
Butter, to spread

Method:
  • In a kadai heat regular/olive oil and add finely chopped garlic and fry for half a minute and then add finely chopped onions and fry well until they turn translucent.
  • Add chopped spinach and boiled corn kernels and fry for 4-5 minutes until the spinach wilts and gets cooked.
  • Now sprinkle the flour(or wheat flour) all over the mixture and mix nicely and fry for a minute or two.
  • Reduce the flame and add milk slowly by stirring continuously( to avoid the lumps formation) and continue cooking until the sauce thickens.You can add 1-2 tbsp cheese to the mixture and mix nicely.
  • Add salt, pepper, chili flakes and oregano and mix nicely and cook until the mixture becomes thick.Switch off the flame and let the mixture cool.
  • Apply Butter on one side of the bread and place 2-3 tbsp of stuffing and spread it nicely and sprinkle required amount of cheese and cover it with another butter sided bread slice and repeat the same for all the sandwiches.
  • Heat an electric grill or Toaster or tawa and add some butter on the griller/toaster/tawa and place the prepared sandwiches and apply another layer of butter on top and close it and grill/toast it until it turns brown. If you are doing on tawa you can fry it on both sides by pressing it nicely with the spatula for uniform color.
Serve it hot with Tomato Sauce.

Notes:
  1. The addition of cheese is optional as the white sauce itself is rich and creamy.
  2. This can be prepared as open sandwich or toast, place the mixture on the buttered bread,baguette and sprinkle cheese on top and place it in preheated oven and bake it for 6-8 mins until the cheese melts.It makes a great party appetizer.
  3. You can make Corn-Spinach Pasta by adding the boiled pasta to the same prepared mixture instead of making a sandwich.
  4. You can make Spinach-Babycorn sandwich by replacing corn with finely chopped babycorn in the recipe.

Pancakes are quick to make as they do not need any fermentation and also they can be prepared instantly. Pancakes are usually make with egg but it can be prepared without eggs easily. One can serve the pancakes with toppings of their choice. My favorite toppings are warm maple syrup, whipped cream,vanilla sauce and berries and sometimes I like to eat them with Nutella or Chocolate sauce. They are so versatile that once you get the basic recipe correct you can play with the flavors and create your own style of pancakes. One can add various fruits like bananas, apples,berries etc to the pancake batter and prepare different fruit version of the pancakes.

For Vegetarians it is usually a challenge in other countries to find good veg fare , hence I always end up having heavy breakfast in the breakfast Buffet. I do not mind eggs in my bakes,pancakes or waffles but somehow I do not like the omelettes or french toasts and I am not a bread person too.Hence I always end up picking up a bowl of cereal or porridge, pancakes or waffles(I do not mind Eggs in them) with various toppings and fruits with juice and coffee which actually keeps me full for longer hours.

Coming to today's post, I often make these Eggless Wholewheat Banana Pancakes and for me these taste exactly like the Banana Appam as the ingredients are almost same. In this pancake recipe, wheat flour works well and is almost a guilt free recipe especially when you make it for kids.Try them for your kids for evening snack or breakfast, they will love it for sure.

Eggless Wholewheat Banana Pancakes Recipe:

Ingredients:
1 cup(120 gms) Wholewheat flour(or All purpose flour)
2 medium ripened Bananas, mashed
1-1.25 cups Milk( 1 cup = 240 ml)
1.5 tbsp fine Sugar( or Jaggery powder)
1 tbsp Oil (or melted Butter)
2 tsp Baking powder
1/4 tsp Cinnamon powder
1/4 tsp Salt
Oil/Butter ,to fry

Method:
  • Mash the bananas and keep it aside.
  • In a wide bowl add wheat flour, sugar,salt, baking powder, cinnamon powder, oil(or melted butter) and mix it nicely using a whisk.
  • Make a well in the center of the wheat flour mixture add 1 cup of milk and mashed banana and mix it until it is mixed.Add more milk if necessary until you get a thick consistency of the batter which can be pourable.Do not over mix the batter,else the pancakes will not be fluffy. Leave this batter aside for 10-15 mins.
  • Heat the dosa pan until it is hot and add few drops of oil and spread it nicely using a kitchen tissue.Make sure that the pan is hot(but not over heated).
  • Mix the batter once and take a medium sized ladle and pour a ladle full of batter and allow it spread on its own(Do not spread). You can prepare 3-4 pancakes at a time depending on the size of your pan.Pour oil from the edges.
  • Once you see the formation of bubbles/holes on the pancakes and also the edges turn slight brown turn them gently to the other side and let them cook again for a minute and remove them and stack them on a plate.
  • Sprinkle few drops of water on the pan and wipe it with the tissue and proceed again to make the pancakes. This ensures that the pan does not become over heated,else you will not see evenly browned pancakes, it will result in white patches on the pancake.
Serve the pancakes with a generous drizzle of Maple Syrup or Honey, Butter(or Whipped Cream)or with a Sauce of your choice like Strawberry Coulis, Mixed Berry Coulis,Butterscotch Sauce,Chocolate Sauce, Nutella or Vanilla Sauce.You can serve with sliced bananas or fruits/berries of your choice.

Notes:
  1. You can use All purpose flour instead of wheat flour in the recipe or 50:50 ratio of both. If you use all purpose flour 1 cup of milk would be enough, if you use wheat flour increase the milk until you get the required consistency.
  2. Cinnamon powder can be replaced with Vanilla essence or Cardamom powder for Banana pancakes.
  3. For a VEGAN version use non dairy milk or water and use oil instead of butter in the recipe.
  4. Sugar can be replaced with Cane sugar or Jaggery powder for healthy version.
  5. It is important to maintain the temperature of the pan , it should be not very hot and should be only on medium heat to get evenly browned pancakes. If the pan is very hot the shapes of the pancakes will be distorted and also they turn in dark color.
  6. The consistency of the batter should be thick but should be pourable. DO NOT SPREAD the pancakes on the pan, you need to pour the batter and leave it spread by itself.
  7. Always use same amount of batter to get same sized pancakes.
  8. Do not over mix the batter,else the pancakes will become tough.
  9. You can avoid Bananas in the recipe and make plain eggless pancakes. You can add berries of your choice to your pancakes or you can even add grated apples instead of mashed bananas in the recipe.
  10. You can add chocolate chips to the batter if you like.
